They should be kept at -18°C or below until use, to preserve quality and food safety.
Crustaceans should be defrosted slowly in the fridge, between 0°C and 4°C, for several hours or up to 24 hours, to preserve texture, flavour and juiciness. Avoid defrosting at room temperature, as this can compromise quality and food safety.
