This cut is the upper limb of the bird, sourced from certified organic chickens. As it is a cut with a good covering of skin, it becomes very crispy and flavourful after cooking. It should be roasted in the oven or grilled, and is excellent served as a starter, a bar snack or on special barbecue menus.
This is the lower part of the bird (including the thigh and drumstick) and has darker, juicier meat due to the animal’s exercise. It offers a much more intense flavour than the standard chicken leg. The best cooking method is slow roasting in the oven, and it is widely used in traditional restaurants for family-style roasts or high-quality stews.
Taken from the front of the bird, this is the leanest, fat-free cut, with a firm texture and excellent quality. To prevent it from drying out and to retain its juiciness, it should be grilled or steamed. It is the ideal cut for quick salads, gourmet sandwiches or menus focused on healthy, organic meals.
This is the upper part of the leg, supplied with skin and bone so that the meat does not lose its juices whilst cooking. It is characterised by being very tender and easy to eat. It should be stewed in a pan or roasted, and works very well in curries, chicken rice or comfort food dishes that highlight natural ingredients.
