Free-range chicken is a white meat produced from slow-growing breeds of poultry, reared outdoors and fed a cereal-based diet, which gives it a more intense flavour, firm texture and superior quality. The result is a lean meat, rich in proteins of high biological value.
This cut corresponds to the bird’s upper limb and, as it comes from birds with greater physical activity, features meat that is yellower, firmer and substantially more flavourful than that of standard chicken. It is best roasted in the oven or fried, making it the perfect choice for a traditional barbecue, where its rustic flavour is particularly appreciated.
Taken from the front of slow-growing birds, this cut is characterised by a firmer texture and richer flavour. To preserve the quality of the meat, it is recommended to grill or boil it, and it is often used in gourmet dishes or recipes that aim to highlight the purity of the ingredient.
Comprising the thigh and drumstick, this part comes from free-range birds, resulting in well-developed muscles and a darker, firmer meat. Due to its muscular structure, it should be braised or slow-roasted in the oven to achieve the ideal texture, making it the centrepiece of traditional dishes such as “pica-no-chão” chicken and rice.
A cut with little meat but a rich flavour, taken from the bird’s neck, with a typically intense flavour. It requires prolonged cooking to release its juices and is a key ingredient in the preparation of traditional chicken soup.
The feet are the lower extremities, a part of the bird extremely rich in collagen and nutritional value. They should be cooked slowly so that their texture becomes tender, and are widely used to enrich homemade soups and broths, or served as a traditional Portuguese snack.

Both have access to outdoor areas, but the grazing land for organic chickens follows organic production rules, whilst that for Free-range chickens is wooded and managed using extensive farming methods.
